Or instead, do dozens of photographers take hundreds of photos over a period of several minutes?
And, if it's the second option, how might one of the leaders signal that it's time to move on?

Quidditch is not a very good game at all. The points reward for catching the snitch makes the rest of what's going on pointless. I suppose when you're writing a story around a character that plays seeker, it's a wonderful dramatic element, especially when the one of the antagonists is a seeker on the opponent's team. But apart from that, it wouldn't make a particularly compelling sport.
