Our favorite style of gumbo is chicken and sausage. We start with a homemade roux as described in the article after cooking the sausage and chicken. We then add chicken broth and vegetables, though no okra. Once it boils, we let it simmer for an hour before adding the chicken and sausage. Later, we eat it over rice.

Gumbo was our New Year's Eve dinner.
