Designers (I am one) use one space. Well designed fonts automatically add a an extra bit of space. Two spaces leave visually distracting "river" of white running through the text. So, yeah, "find and replace" for most text I get, particularly from people from the typewriter or early word processor era.
The first thing kids need to learn is the love of learning. If they never experience that, they have no investment in staying in school or finding any value in traditional subjects. Sounds like this project might really help.

In Southeast Alaska, large ravens are everywhere. In Sitka, they drop shellfish onto the city tennis courts to crack the shells. Quite unpleasant, when your tennis balls smell like a very low tide from expired mussels. I don't know anyone who isn't fascinated by their intelligence. They have a wonderful call, too. And for all of their urbanization, I've yet to see a raven nest. Secretive.
