This crustacean is a crayfish, also called a crawfish, crawdad, yard lobster, freshwater lobster, mudbug, yabby, and other names depending on where you live. They can be tasty with the right sauce. Me, a Yankee? Many would laugh at the idea. I'm a hillbilly. Sweet milk is hillbilly for not-buttermilk. But since no one drinks buttermilk if they aren't forced to, the term "sweet milk" has died around here.

Crawfish are properly eaten with a jug of sweet milk and a newspaper. Just spread the crawfish on the newspaper and start eating. Take a swig of milk now and then to put out the fire. And if your mouth doesn't start to burn, the crawfish haven't been sufficiently spiced.
