Well chickens don't appear on the chart because they're not mammals. Likewise, if the chart included insects it would probably look very different.
It's not really surprising that domesticated animals and humans dominate the chart. Part of the reason we have so much livestock is that we've spent a lot of time and effort figuring out how to raise them more efficiently than in the wild.
