It doesn't sink in quite as fast as you'd expect, but the Velveeta does liquify under the heat. Cue the argument over whether Velveeta is cheese. Wikipedia says Velveeta has "a taste that is identified as a type of American cheese." It is labeled as a "Pasteurized Prepared Cheese Product," which is a classification that the FDA doesn't have standards for. So who knows.
