Baked Potato Grilled Cheese Sandwiches

BS in the Kitchen named this creation baked potato grilled cheese sandwiches, but they're really more like potato skin grilled cheese sandwiches (though they aren't made with only the skins) because the potatoes are sliced nice and thin and then fried before being added to the sandwich. The delicious treats are then topped with cheddar cheese, sour cream, bacon and green onions before they are fried up into crispy, fatty snacks.

While the site doesn't mention this, I feel like ranch or blue cheese dressing would be a killer dipping sauce on these sandwiches, the same way you dunk potato skins in those great sauces.

Sigh... why is it that while I'm on a "long-term weight loss/control program" (don't call it a diet, but hey, my doctor gave me attaboys for averaging 5 pounds a month lost), that putting potatoes into sandwiches becomes a 'thing'? Of course, pierogis were stuffing dumplings with potatoes in Poland since before Polish jokes, but the sammich above is making me drool all over my laptop and attracting the cat. Then again, using bacon as the one meat ingredient is almost cheating, drool-wise. Maybe if I taped bacon to the cat... nah, it's been done.
