I've seen ricotta on pizza before, but it just looks so sloppy sitting there all alone. That's why Little Vincent's is so smart -they opted to seal all that messy ricotta in ravioli before covering it in mozzarella. It's so much more organized when the ricotta is separated in their own protective pockets.
