Gingerbread houses are so passé. The new happening trend in culinary art is matzoh houses--miniature buildings made out of flat bread. You can see more at the link.

If you go to the link, it's clear she made this very impressive treat for Hanukkah, not Passover (beyond the fairly obvious fact that many of the ingredients are not Kosher for Passover). Since both holidays are eight days long, your post is confusing.

"flat bread traditionally eaten during Hanukkah" Matzoh is not traditionally eaten during Chanukah. It is almost exclusively eaten during Passover. Some of those houses have non kosher-for-passover ingredients but it is still not a Chanukah dish.
