Soemtimes the lucky ones get to go in at 6 pm and work until 3 or 4 am! I did a short stint with a prominent bakery in the ATL, GA area. We made great bread but didn't have nearly the fun these guys do (and I'm sure if we had, it would have been against company policy).

The recipes that come with it work wonderfully as long as you learn three things:

1. Use cheap, bulk ingredients designed for breads. Fancy flours and yeasts do strange things.
2. Measure the yeast with precision. Adjust to alter the amount of rise.
3. Learn what a the loaf should look like after the first kneading. Add or reduce water so that it is a single, slightly sticky ball.
