From 1935 through the 1950s, U.S. farmers planted kudzu to prevent soil erosion. This proved to be a bad idea. The vine spread rapidly, killing off other plants, including crops, across the southeastern United States. It's an invasive plant eating away at productive farmland. Fight back by eating it, as this woman does by cooking kudzu into quiches.
