A hot dog is fully cooked before you buy it, glued meat is not. It is still raw and since it was in smaller pieces before, there is more surface area exposed to potentially harmful bacteria. That is why ground beef is usually involved in e. coli bacteria outbreaks and steaks are not.

Fear-mongering. The meat is only dangerous if not cooked hot enough. The enzyme is dangerous to work with because it'll probably glue your lungs together if you breathe it in. If you're concerned about being sold cheap meat scraps, go to a butcher and get the cuts made yourself.

Manticore, the enzyme itself isn't dangerous, that guy is way over over the top with his meat glue rage.
Lee U, It's being sold as cuts of meat like eye fillets which aren't meant to be cooked that thoroughly, so I guess thats where the problem is.

Sure, this wouldn't be a problem if everyone liked their steaks well done.
What about the folks who enjoy rare, or medium rare. Hell, even just medium.
