Martin Frost's Fore-edge Painting.

What is fore-edge painting? Martin explains:

Fore-edge painting is where the page block is fanned and an image applied to the stepped surface. If the page edges are themselves gilded or marbled, this results in the image disappearing when the book is relaxed. When refanned, the painting magically re-appears.

I've seen double sided ones in the Rare Book Room at the University of Illinois. If you slide the pages one way you get one picture and if you slide them the other way you get a completely different picture.
